Key Lime Pie Bars

Ingredients

8 ounces Biscoff cookies, finely crushed

1 stick of butter, melted

2 cups Mayfield heavy whipping cream

1/4 cup + 1 teaspoon sugar, divided

2 (.3 ounces) packets lime flavored gelatin

2 cups Mayfield cottage cheese

8 ounces cream cheese, room temperature

Zest of a lime

How to

Spray a 9 x 13” baking dish with cooking spray.

In a small bowl, combine crushed Biscoff cookies, butter, and 1 teaspoon sugar until it has the texture of wet sand.  Press crumb mixture in the bottom baking dish and refrigerate while preparing filling.

In the bowl of a stand mixer fitted with the whisk attachment, whip heavy cream and 1/4 cup sugar on high just until stiff peaks form. Refrigerate whipped cream while you prepare the rest of the filling.

In a large bowl, combine gelatin powder and hot water according to package directions. Whisk until dissolved and set aside.

In a blender or food processor, blend cottage cheese and cream cheese until smooth, scraping mixture down from the sides halfway through. Whisk 1/2 cup of the cottage cheese mixture into the gelatin mixture. Whisk in remaining cottage cheese mixture until smooth. Use a rubber spatula to fold in whipped dessert topping. Spoon filling over chilled crumb mixture.

Cover and refrigerate for several hours or until filling is firm. To serve, top with lime zest and cut into squares.
