Platanos Chapines

Platanos Chapines, or fried plantains, are a traditional treat in many parts of the world. Platanos Chapines is a Guatemalan recipe submitted by Miriam Jacobo Lemon. "Platanos Chapines are usually eaten for dinner with refried black beans. There are many ways to cook plantains (due to their abundance), but this is just a family favorite," says Cidne Lemon, Mrs. Lemon's daughter.

Ingredients:
3 or 4 ripe plantains
1/2 cup of oil
2 cups of Mayfield Sour Cream
1 teaspoon cinnamon
4 teaspoons sugar



Directions: Mix sour cream with sugar and cinnamon and keep cold. Fry the plantains until golden brown. Dry the plantains from any excess oil. Place the fried plantains on a plate and sprinkle sugar on them. Serve them warm with the sour cream mixture on top.
