Hot Milk Cake with Mix it Up Icing

4 eggs
2 cups sugar
2 teaspoons vanilla
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup Mayfield Milk
1/4 cup butter
 

Directions:
In a mixing bowl beat eggs sugar and vanilla until thick.  In a separate bowl combine flour baking powder and salt.  Add dry ingredients to egg mixture and beat just until combined.  In a saucepan bring milk and butter to a boil stirring constantly.  Add to batter and beat until combined.  Pour into a greased 13-in. x 9 in. x 2 in. baking pan.  Bake at 350 degrees for 35-40 minutes or until cake tests done.

Mix up your favorite icing.  Here are three of our favorites to choose from.

Caramel Icing:
Melt 1 stick of butter in saucepan.  Add 1 cup brown sugar and heat until melted and smooth.  Remove from heat.  Add 1 teaspoon vanilla.  Pour over 1 pound powdered sugar in mixing bowl.  Beat on low speed.  Add Mayfield Half and Half to moisten.  Beat on high until creamy.  Pour over warm cake.

Broiled Coconut Icing:
Combine 1 1/2 cups packed brown sugar 3/4 cup melted butter 1/2 cup Mayfield Half and Half and 2 cups flaked coconut.  Spread over warm cake.  Broil until lightly browned about 3-4 minutes.

Peanut Butter Icing:
In mixing bowl combine 3 cups powdered sugar 1/2 cup peanut butter and 1 teaspoon vanilla.  Stir in 2-4 tablespoons Mayfield Milk 1 tablespoon at a time to make spreadable and if desired sprinkle top with 1/4-1/2 cup candy- coated chocolate pieces.
