Easy Brownie Ice Cream Sandwiches

1 pint of your favorite Mayfield Ice Cream - we suggest Turtle Tracks or Caramel Coyote
4 large, freshly baked, store-bought brownies, about 3-4" square
Freshly whipped Mayfield Whipping Cream (Optional: add a little zing to your homemade whipped cream by adding a dash of your favorite liqueur - we enjoy amaretto with this recipe)
 

Prep Time: 15 minutes
Yields: A great Valentine's Day treat for two

Set ice cream out to soften slightly while you prepare the brownies. Set brownies on cookie sheet and press down firmly with a heart-shaped cookie cutter. You may nibble the discarded parts. Place one heart-shaped brownie on each of two plates. Spread lightly-softened ice cream on the brownie. Place remaining brownies on top and press down lightly. Serve immediately with a dollop of whipped cream or place in the freezer to set for a later meal.
