Country Potatoes

Someone always volunteers to bring this dish when my extended family gets together for Thanksgiving dinner. Everyone loves it, from the infants to the great-grandparents! It is also a family tradition to serve this dish at Christmas dinner and most celebrations throughout the year.


6 medium potatoes
1/2 c butter
1 c Mayfield sour cream
1 1/2 c grated sharp Cheddar cheese
3/4 c chives (optional)
Salt and pepper to taste
 

Peel potatoes and cut in half. Place in saucepan and cover with water. Add a dash of salt and slowly boil until a fork-test shows they are tender. Drain and put in a bowl; mash and mix with mixer. Add butter, sour cream and salt and pepper and beat with mixer until smooth. Spoon in chives. Spoon mashed potatoes into greased two-quart casserole dish and top with cheese. Bake in a 325 degree oven until potatoes are heated thoroughly and cheese is melted, about 20-30 minutes.

Serves 6. Recipe doubles easily.
