Cheesy Baked Eggs

12 eggs, beaten
2 c Mayfield Cottage Cheese
2 c shredded Swiss or Monterey Jack cheese
1/4 c flour
1 t baking powder
1 stick of butter
 

Serves: 9

You can easily feed 12-15 with this dish – just add half of the ingredients, except the butter, and put in a 10x13 pan.

This is a wonderful dish on Easter morning. It is easy to prepare and while it cooks, you can watch the children hunt Easter eggs. You can even bake this a day ahead, refrigerate and reheat on 300 degrees for 30-40 minutes.

Mix all ingredients together in a large bowl. Pour into a greased 2- quart dish and bake at 350 degrees for 35- 40 minutes. Make sure the casserole is set in the middle. Serve warm.
