Broccoli Cornbread

4 eggs beaten
1 stick butter melted
1 large onion chopped
1 box frozen broccoli chopped & thawed
16 oz (2 cups) Mayfield cottage cheese
1 teaspoon salt
2 boxes corn muffin mix

Directions:
Cook broccoli until tender, Combine muffin mix, broccoli, and onion in large bowl

Add butter, slightly beaten eggs and Mayfield cottage cheese to mix, stir until smooth.

Pour batter into either iron skillet or an 8x8x2 baking dish.

Bake 350 degrees for 35 minutes or golden brown.
