Belgian Waffle Ice Cream Sandwich

Ingredients
1 3/4 c pancake mix
1 T granulated sugar
Zest from 1/2 orange

Mix dry ingredients together in a bowl

1/2 c Mayfield Milk
1/4 c Mayfield Buttermilk
1/4 c Mayfield Orange Juice
1 egg, beaten
1 1/2 T melted butter
1 t vanilla extract
1 t brandy

Combine together and then add to dry ingredients.  Stir until thoroughly mixed.  Pour batter into a heated waffle iron and cook until golden brown. Cut each waffle into quarters.

Mayfield Cream, whipped

Instructions:
To make the sandwich, place one quarter waffle on a plate and top with one scoop of Mayfield vanilla bean ice cream. Drizzle with your choice of toppings and cover with a second waffle quarter and a dollop of real Mayfield whipped cream. Toppings to try: Fresh strawberries, peaches, blueberries or raspberries, chocolate sauce, caramel sauce, toasted almonds or pecans and shaved coconut.
